Chicken and Broccoli Platter

Chicken

Ingredients

4 chicken breasts ( 2 lb.)

1/4 cup bread crumbs

1/4 cup Parmesan cheese

1 teaspoon paprika

1 egg beaten

1/4 cup sherry

1 bunch broccoli

SAUCE:

2 tablespoons butter

2 tablespoons all-purpose flour

1/4 teaspoon salt

3/4 cup milk

1/2 cup shredded cheddar cheese

Directions

In shallow dish, combine bread crumbs, Parmesan cheese and paprika. Place egg in another shallow dish. Dip chicken into egg, then roll in crumb mixture, coating evenly; reserve any remaining crumbs.

In 8-in baking dish, arrange chicken breasts, folding under short ends to form rolls. Pour sherry around chicken; sprinkle with remaining crumb mixture. cover with waxed paper. Microwave at high for 5 to 7 minutes or until springy to touch. Stir once. Drain off cooking juice and reserve. Set chicken aside.
Cook broccoli. Set aside.

Sauce: In 2-cup glass measuring cup, microwave butter at High for 30 to 45 seconds or until melted; blend in flour and salt. Microwave at High for 30 sec. Gradually stir in milk and reserved cooking juices from chicken. Microwave at High for 2 to 3 min. or until mixture has thickened, stirring twice. Stir in cheese until melted.

Place chicken in centre of 10-in microwavable platter; arrange broccoli around chicken. Pour cheese sauce over broccoli. Cover and microwave at High for 2 to 3 min. or until heated through. Makes 4 servings.
